Anyone who thinks that such a chocolate cake with a liquid core is a real challenge and only something for experienced bakers is wrong. We have an ingeniously simple lava cake recipe that can be made in just 20 minutes.
Lava Cake: Detailed Recipe
You Need For The Lava Cake Recipe:
- 250 g dark chocolate
- 175g butter
- 75 grams of flour
- 125g powdered sugar
- One pinch of salt
- Five eggs (size M, at room temperature)
- Five small gratin moulds
- some butter for greasing
- some flour for sprinkling
This Is How It Works:
Preheat the oven to 200 degrees top/bottom heat (or 180 degrees convection). Grease the gratin moulds with a bit of butter and dust with flour.
Melt the chocolate and butter in a saucepan over low heat. Ensure that the stovetop is not too hot. Otherwise, the chocolate will burn and become gritty. Mix evenly until you get a shiny, dark brown mass. Take it from the stove and let it cool off.
Place the flour in a bowl and mix with the powdered sugar and salt. If you don’t like the lava cake, reduce the amount of sugar accordingly.
Now add the room-temperature eggs to the flour-sugar mixture and stir. Necessary: The eggs must not come fresh from the refrigerator, as they are too cold!
Finally, stir in the chocolate-butter mixture until you get a creamy batter, and fill the moulds evenly. Bake at 200 degrees top/bottom heat on the middle shelf for about 15 minutes.
Tip: If you don’t have any gratin cases, you can also use silicone muffin cases. They have the advantage over metal moulds in that the soft lava cakes come out better. Necessary: With small tartlet tins, the baking time is reduced to approx. 12 minutes.
Refine Lava Cake With Topping
Due to the chocolate and powdered sugar used in the recipe, the lava cake is quite sweet. With a fruity topping, you set the perfect counterpoint. An absolute dream team is chocolate cake and raspberries. The healthy fruits give the cake a slightly sour note and take the dessert to the next level.
Puree a packet of fresh raspberries, add a squeeze of lemon juice and pass the fruit pulp through a sieve so that there are no pips.
Spread the fruit topping on the dessert plate and place the lava cake on top. Finally, sprinkle a few whole raspberries on top. If you like, sprinkle some powdered sugar over the plate. A real dream!
